Most new Mexico red on sale is actually Anaheim chilli from California - you can find that here, its a lovely sweet berry chilli related to Pasilla, but it is not new Mexico red
Our Authentic New Mexico Red is as it should be, very bland in flavour, hardly any heat and bags of red colour dye all natural when cooked into food
The flavour of the other ingredients over powers the new Mexico red chilli but the new Mexico red colouring over powers everything else

Great in TexMex dishes
I once made the classic mistake of using tablespoons of European 'chilli powder' in a classic Texan chilli recipe (and exploded the diners). This New Mexico Red, is what was actually required. You do need a lot of it, but the flavours and gentle warmth produced, give the wonderful chilli bean stews of the southwest. A marvel.
