When the temperature drops, I like to treat the team to a bowl of spicy tortilla soup. It's a cosy, satisfying dish, easy to make-store - reheat when ready and the subtle kick of chilli does wonders to keep the chill at bay

And when the team’s in need of a real treat, we pull together and make up some enchiladas—it’s become one of our Christmas traditions

Chicken Enchiladas with Mole Sauce (Serves 4)
Ingredients:
Dried Ancho chillies: 2
Dried Chipotle chillies: 1
Cumin: 1 tsp
Cinnamon: 1/2 tsp
Garlic powder: 1 tsp
Onion powder: 1 tsp
Chicken breasts: 2 (about 400g)
Tortillas: 8
Cocoa powder: 1 tbsp
Tomato paste: 2 tbsp
Chicken broth: 500 ml
Onion: 1, chopped
Garlic cloves: 2, minced
Olive oil: 2 tbsp
Instructions:
Rehydrate dried chillies in hot water for 15 minutes. Drain, remove stems and seeds, and blend with garlic, onion, tomato paste, cumin, cinnamon, cocoa powder, and chicken broth until smooth.
Heat oil in a pan, add the mixture, and cook for 10 minutes until thickened.
Fill tortillas with shredded cooked chicken, roll up, place in a baking dish, and pour mole sauce over.
Bake at 180°C for 20 minutes. Serve with fresh coriander and lime wedges.
 
Spicy Tortilla Soup (Serves 4)
Ingredients:
Dried Pasilla chillies: 2
Cumin: 1 tsp
Smoked paprika: 1/2 tsp
Garlic powder: 1 tsp
Chicken broth: 1 litre
Tomato paste: 3 tbsp
Onion: 1, chopped
Garlic cloves: 3, minced
Tortilla strips: 100g
Olive oil: 2 tbsp
Instructions:
Rehydrate chillies in hot water, then blend with garlic, onion, and tomato paste.
In a pot, heat oil, add the chilli mixture, cumin, smoked paprika, and cook for 5 minutes.
Add chicken broth and simmer for 20 minutes.
Serve hot, topped with crispy tortilla strips and a dollop of sour cream.
