Jalapenos are used as the chilli base, allowed to mature to full red to provide a citrus sweet flavour
The jalapeno is smoked dried for a few days to create the wonderful chipotle
Chipotle means smoked pepper from the Aztecs making this drying process one of the oldest still in use today
Chipotle adds deep sweet smokey flavour to any food likes it just been cooked over an open flame, add to any dish from baked beans to lasagne let alone a variety of authentic Mexican cuisine

Each chipotle pod weighs approx 7g but will vary
The chipotle can be chopped up and used in any sauce, 5mins of simmering will soften the skin, release its wonderful smokey flavour and blend into the texture

A little warm water and 5-10mins the chipotle can be blended to make a paste and used as you wish

Chipotle Morita Chilli Flakes - Quick Reference
- What are Chipotle Morita flakes?: Ripe red jalapeños that have been smoke-dried, destemmed and cut into flakes with the seeds included.
- Principal flavour: Deep sweet smoke with a distinctive nutty character from the traditional pecan-shell smoking process.
- Supporting notes: The ripe jalapeño base contributes gentle citrus sweetness beneath the smoke.
- Heat level: Medium; warmer than mild Mexican chillies but valued as much for smoke and flavour as heat.
- Common uses: Mexican dishes, chilli con carne, beans, barbecue sauces, marinades, lasagne and any dish needing an open-fire character.
- Pairs well with: Tomato, garlic, cumin, oregano, beef, pork, chicken, beans, cheese and chocolate.
- How to use: Stir directly into sauces and simmer for around five minutes, or soak in warm water for 5-10 minutes and blend into a paste.
- Texture: Flakes provide the full aroma of whole Chipotle while being quicker to soften and easier to portion.
- Comparison: Morita is the darker, softer and generally fruitier style of Chipotle, distinct from larger tan Chipotle Meco.
