When cooking with ancho flakes they will not break down but will go very soft being a blended texture ideal for any sauce
Typically 1 heaped teaspoon of flake is 1/2 a whole pod
To make an ancho paste simply add warm water, waste 2-5 mins till soft and stir, can be blended

Ancho Chilli Flakes - Quick Reference
- What are Ancho chilli flakes?: Dried ripe poblano chillies cut into approximately 3mm flakes, including the natural pod flavour and texture.
- Principal flavour: A distinctive sweet berry flavour; this is the defining character of a good-quality Ancho.
- Supporting notes: Gentle dried-fruit depth and soft pepper richness without sharp chilli heat.
- Heat level: Mild; Ancho is selected for flavour rather than strong heat.
- Common uses: Mexican sauces, mole, chilli con carne, marinades, rubs, stews and slow-cooked meat or vegetable dishes.
- Pairs well with: Cumin, Mexican oregano, garlic, tomato, cocoa, cinnamon, beef, pork and beans.
- How to use: Add directly to cooking for a soft textured finish, or soak in warm water for 2-5 minutes and blend into a paste.
- Quantity guide: Approximately one heaped teaspoon of flakes is equivalent to half a whole Ancho pod.
- Comparison: Sweeter and brighter in flavour than Mulato, which has a darker berry character.
- Storage: Keep sealed in a cool, dry place away from direct sunlight.

I used to buy ancho flakes from Sainsbury's, then I had some whole ancho from SpicesOnTheWeb, and so bought these flakes, they are 1000x better. Fruity, depth, gentle heat. Lovely. I put them on pizza!
