Quick Reference
What is it?: A wild Sichuan-type pepper gathered in western Bhutan in the Himalayan region.
Flavour: Intensely lemony and aromatic, followed by the characteristic tingling, numbing sensation.
Common uses: Curries, grilled meats, fish, broths, spice salts and finishing blends.
Pairs well with: Chicken, pork, citrus, ginger and coriander seed.
Compare with: Brighter and more lemon-led than many Chinese Sichuan peppers.
Substitute: Timut or green Sichuan pepper for a related citrus-tingle effect.
Storage: Keep sealed in a cool, dry place away from steam, moisture and direct light. Whole peppercorns retain their aroma longer than ground pepper; close the pack promptly after use.
Good to know: This is a Zanthoxylum spice rather than true black pepper, so its defining effect is citrus aroma and tongue tingling rather than pepper heat.
