Pick Your Own Fruit, what happened to that? Talking to staff who are looking forward to the summer holidays in a couple of weeks, Scotland has started, how's it going?

The start of the 80s economy was dire, the first week of summer holidays was pick your own fruit week, as much as you could carry and eat, out of group of families the kid who acted up the most got the gooseberry bushes! can still see and feel those spikes

What followed was a mass cooking session with waft of jams, curds wafting out over the street, it was not until the 90s we started to buy strawberry jam from the shops

Fruit's inherent sweetness can stand up to contrasting savory notes, like fresh herbs, vinegars, and even pepper (crushed pink peppercorns are perfect for jam). Woody herbs - think rosemary and thyme stand up to the cooking process without becoming wilted. Use ground spices sparingly, adding a little in the beginning, then adding more to taste.
