We hope every one has been safe and sound during the recent storms, we had a lucky escape from a falling tree. Just outside our unit was a lovely tree, standing tall and proud on its own mound, birds have been nesting in its branches for years. It was starting to rot at its base which nobody noticed, the wind finished it off, luckily it fell into the road and didn't hurt anybody or any buildings, if it fell the other way though it would have taken out a section of our unit, enough to close us down for a while. Thankfully all is good and we look forward to some warmer days soon and the start of spring. Stay safe, stay well, Steve and the Team

So you use spices but not given Mexican Chilli a thought, most chillies are very low in heat, but have bags of flavour - Ancho is sweet berry, Pasilla - raisin, Cascabel is nutty, Guajillo - fruity tannic, Mulato - dark berry, Chipotle - Smokey Pecan, de arbol is a hot cayenne for heat lovers - all finished off with deep sweet herby Mexican Oregano
