Trust us; your taste buds will be dancing all the way through the start of autumn nights Steve and the Team This weeks discount code is  StewSpices25 Good for 1 use per customer, expires 7th October Find your Stew Spices and Herbs here Hearty Sausage and Lentil Stew Recipe Serves 3-4 Ingredients: 4-6 sausages (pork or vegetarian/vegan) 200g dried lentils (brown or green) 2 carrots, diced 2 parsnips, diced 2 potatoes, diced (Can add different or more veg you prefer) 1 onion, finely chopped 2 cloves garlic, minced or 1 Tsp of Garlic Granules 1 litre vegetable or chicken stock 2 bay leaves 1 tsp dried thyme 1 tsp dried sage Salt and Pepper, to taste Olive oil, for cooking Instructions: Cook the Sausages: In a large pot, heat a little olive oil over medium heat. Add the sausages and cook until browned. Remove and set aside. Prepare the Base: In the same pot, add a bit more olive oil. Sauté the onion and garlic until softened. Add Vegetables and Lentils: Add the diced carrots, parsnips, potatoes, and lentils to the pot. Stir for a few minutes to combine. Add Stock and Herbs: Pour in the stock, and add the bay leaves, thyme, and sage. Bring to a boil, then reduce to a simmer. Cook: Let the stew simmer for 25-30 minutes, or until the lentils and vegetables are tender. Slice the sausages and add them back to the pot in the last 10 minutes of cooking.
