Mexico: Where Chilli Became Culture

Chilli has been at the heart of Mexican food for thousands of years. Alongside maize, beans and squash, it formed part of the foundations of Mesoamerican cooking long before modern Mexico existed.

But chilli has never simply meant heat. Generations of cooks learned how different chillies bring colour, aroma, sweetness, smoke and depth — each suited to different dishes and traditions.

As Mexico celebrates Independence Day on 16th September, food once again becomes part of the celebration, bringing families and communities together around the table.

In Mexico, chilli isn't just an ingredient — it's part of the story.

Guajillo

Bright, berry-rich and beautifully balanced.

Deep red and wonderfully aromatic, Guajillo is one of those chillies that proves Mexican cooking isn't simply about chasing heat.

Its gentle warmth comes with berry-like sweetness, earthy depth and a slight tang, making it superb for sauces, marinades, stews and traditional Mexican dishes.

Pair it with the deeper richness of Ancho or add a little De Arbol when you want to turn up the fire.

Flavour first. Heat second.

A Chilli Changes When It Dries

Here's one of the lovely quirks of Mexican chilli culture: a chilli can acquire a different name when dried.

The fresh Poblano, for example, becomes Ancho when ripened and dried. A ripe Jalapeño can become Chipotle after smoking and drying.

Drying isn't merely preservation. It concentrates and transforms flavour, creating deeper, richer and sometimes raisin-like, earthy or smoky characteristics.

Same berry. A remarkably different personality.
