The Catarina, also known as Chile Cora or Ladybug chile, is a traditional Mexican variety valued for its rich flavour and versatility. Native to the state of Nayarit in central Mexico, this pepper is closely related to the Cascabel and shares its distinctive rattling quality when dried, as the seeds shake within the hollow pod.
Pods are small and round-oval in shape, resembling little eggs, and ripen from green to reddish brown. They have medium-thick walls and are typically dried to develop their deep, earthy aroma. When used fresh, the peppers can substitute for Jalapeño or Serrano, while in dried form they provide a smoky, fruity complexity ideal for seasoning blends and sauces.
Flavour is rich and balanced, with medium heat and notes of fruit and wood smoke. When dried and ground, Catarina produces a versatile all-purpose powder widely used in Mexican cooking — particularly in marinades, soups, stews, and tamales, or as a rub for beef and lamb.
Plants are compact, around 90–120 cm tall, yet notably productive, producing abundant clusters of small pods each cycle. They perform best in full sun and warm conditions, requiring little staking.
Deeply rooted in Mexican cuisine, the Catarina has long been valued for adding subtle warmth and layered depth to dishes and is a favourite among those seeking authentic regional flavours.
