What is it?: Certified organic whole dried flower buds of the clove tree.
Flavour: Intensely warm, sweet and pungent, with peppery, woody and slightly numbing notes.
Common uses: Baking, mulled drinks, curries, ham, pickles, chutneys, rice dishes and spice blends.
How to use: Use whole for infusion and remove before serving, or grind freshly for blends and baking.
Compare with: Ground cloves give immediate flavour, while whole cloves release more slowly and are easier to remove.
Substitute: Allspice can provide a gentler related warmth; nutmeg or mace may help in sweet recipes but are not exact matches.
Storage: Store in a cool, dry place away from direct sunlight and moisture. Keep sealed to protect the aroma and flavour.
