As Thailand’s specialty coffee movement grows, younger generations are returning to farming with fresh ideas. Nui and Aoy Jaisooksern, a young couple from Chiang Mai, left city jobs—engineering and accounting—to take over their family’s farm in Doi Saket nine years ago. Now, they’re helping shape the future of Thai coffee, working with heirloom varieties like Typica at elevations over 1,300m.
Their collaboration with processing partner Beanspire brings out the best in these rare coffees. This White Honey processed lot balances body with brightness, offering flavours of speculoos biscuit, delicate marmalade, and green apple.
Our green buyer Roland finally met Fuadi from Beanspire at World of Coffee Copenhagen last year, after years of remote collaboration—an inspiring moment that reflects the wider spirit of connection across the supply chain, including our importer, This Side Up, who are shifting to a Steward Ownership model.
