Create the enchiladas as normal and use the sauce inside and or outside, add cheese if wanted and bake as normal
Ingredients: Water, tomato paste, chile pasilla, guajillo chile, salt, sugar, vinegar, garlic powder, bay leaf, epazote and cumin.

Got this from the clearance items, so it was a bargain. But it's very spicy so we can only use it sparingly.
