However some salts are formed by the climate, as sea water washed up in shallow patches and then dried by the sun it leaves behind crystals of salt
As the sea water evapourates the salt is formed like flower petals, hence the term Fleur de Sel - Flowers of Salt
This can be found in many areas of the world, this is Indian Sea Salt, known locally has Sunflakes

Quick Reference
What is it?: A Sicilian flower-of-salt finishing salt gathered from delicate crystals formed on Mediterranean salt pans.
Flavour: Clean, gently mineral and delicately crunchy.
Common uses: Pinch over finished food so the crystals remain visible and textural.
Pairs well with: Tomatoes, fish, grilled vegetables, pasta, focaccia and chocolate.
Compare with: More delicate than coarse Mediterranean sea salt and intended primarily for finishing.
Substitute: Fleur de sel or another fine salt flake is the closest replacement.
Storage: Keep sealed in a cool, dry place away from steam and moisture. For smoked or delicate finishing salts, close the pack promptly to protect their aroma and crystal texture.
Good to know: Fiore di sale is the Italian equivalent of fleur de sel: the fragile surface crystals rather than the heavier salt beneath.

Sicilian sea salt
If you want to cut down on your sodium intake then buy this. It’s ridiculously salty but in a mellow way so you don’t need loads at all. Exceptional sea salt.
