Galangal Powder - Quick Reference
What is it?: Dried galangal root ground to a convenient powder for Southeast Asian cooking.
Flavour: Sharp, citrusy and peppery, with pine-like, earthy notes that distinguish it from ginger.
Common uses: Use in Thai curries, laksa, soups, marinades, sambals, sauces and seafood dishes.
Pairs well with: Pairs well with lemongrass, lime leaf, chilli, coconut, garlic, coriander and seafood.
How to use: Stir into liquids early in cooking so the powder hydrates and the sharper notes mellow into the dish.
Compare with: Galangal is firmer, more citrus-pine and less sweet than ginger, despite the visual similarity of the fresh roots.
Substitute: Ginger with a little lime zest can provide a workable substitute, though it will be warmer and less pine-like.
Good to know: Powder gives convenience and even distribution, but freeze-dried slices provide a fresher, more distinct root character.
