Horseradish Powder Fine - Quick Reference
What is it?: Finely ground dried horseradish root, made without extracting the natural flavour first.
Flavour: Sharp, warming and mustard-like, with a clean root heat that develops when moistened.
Common uses: Horseradish sauces, roast beef accompaniments, smoked fish, mashed potato, dressings and savoury dips.
Pairs well with: Beef, beetroot, potato, apple, mustard, sour cream, dill and oily fish.
How to use: Mix with a little cold water, vinegar or cream and allow it to stand briefly before adjusting the strength. Add gradually because the heat can build quickly.
Compare with: Finer and quicker to disperse than kibbled horseradish, making it better for smooth sauces and dry blends.
Substitute: Wasabi powder or hot mustard powder can provide similar nasal heat, although the flavour will not be identical.
Storage: Keep tightly sealed in a cool, dry place. Moisture and prolonged exposure to air will weaken the volatile heat.
