Quick Reference
What is it?: Finely ground Indian black salt with the characteristic sulphurous aroma of kala namak.
Flavour: Strongly savoury and egg-like, dispersing quickly because of the fine grind.
Common uses: Stir directly into food, sprinkle lightly, or blend into vegan egg seasonings and chaat masala.
Pairs well with: Tofu, eggs, fruit, yoghurt, potatoes and Indian snacks.
Compare with: Faster and easier to disperse than coarse grains or chunks, so less is needed in one spot.
Substitute: Coarse kala namak can be ground down before use.
Storage: Keep sealed in a cool, dry place away from steam and moisture. For smoked or delicate finishing salts, close the pack promptly to protect their aroma and crystal texture.
Good to know: Add it near the end of cooking because prolonged heat can soften the distinctive sulphurous aroma.

Great stuff
Take a regular cheap fizzy drink - like Sprite or 7Up, I like Ginger beer the best and Cola isn't great for this recipe - then add a little of this and some freshly squeezed lime, and the result? Fabulous!!! In general, the bad smell soon fades away. Super stuff.

French fries / pommes frites
This salt is great for fried pommes frites. In the first seconds this salt smells like someone left a fart. But after that the pommes smells like wrapped in roasted chicken skin. Absolutely great.
