Organic Light Cane Sugar 1kg - Quick Reference
What is it?: Organic light cane sugar with fine golden crystals and a mild natural molasses character.
Flavour: Clean sweetness with light caramel and toffee notes.
Common uses: Baking, hot drinks, sauces, marinades, chutneys, preserves and spice blends.
Pairs well with: Cinnamon, ginger, vanilla, citrus, chilli, coffee and chocolate.
How to use: Use as a direct sweetener; in baking it can generally replace white sugar where a little extra colour and flavour are welcome.
Compare with: It is lighter and less molasses-rich than dark brown sugar, but more characterful than refined white sugar.
Substitute: Demerara gives more crunch and caramel flavour; white sugar gives a cleaner, paler result.
Storage: Store airtight and dry to prevent the crystals from hardening or clumping.
Good to know: The light golden colour comes from a small amount of natural cane molasses remaining with the sugar crystals.
