Lemon Peel Powder - Quick Reference
What is it?: Dried Spanish lemon peel finely ground into powder.
Flavour: Intense lemon zest with bright citrus oil, gentle bitterness and no added liquid acidity.
Common uses: Cake mixes, biscuits, icing, seasonings, sauces, marinades, confectionery and drink powders.
Pairs well with: Ginger, garlic, thyme, black pepper, vanilla, poppy seed, fish and chicken.
How to use: Blend directly into dry ingredients or whisk into liquids. Begin sparingly because the fine powder disperses quickly and evenly.
Compare with: Smoother and faster acting than peel granules or julienne strips, with no noticeable pieces in the finished dish.
Substitute: Fresh zest can be used where extra moisture is acceptable; lemon granules are better when visible texture is wanted.
Storage: Protect from air, humidity and direct light.
Good to know: The powder is useful when lemon flavour is needed in a dry formulation where juice or fresh zest would alter the texture or shelf life.
