Description

Sumac is a wonderful herb from the Middle East traditionally centred in Turkish Cuisine
Sumac is a tree/shrub with its fruit being the part we use - often called sumac bobs, or sumach - sumaq
These fruits are taken, dried and ground down to produce a wonderful tangy crimson spice
Can be used in meat / veg meal, sauce, but particular good for making the best lamb kebabs
Most sumacs contain salt to enhance the flavour, our sumac is fresh and processed correctly so no enhancer is needed, just smell the spice before using to see what we mean
Grown and Ground in Turkey

Sumac - No Salt - Quick Reference
- What is it? Ground dried sumac berries with no added salt.
- Flavour Bright, tangy and fruity with a lemon-like sourness and gentle berry depth.
- Common uses Kebabs, salads, hummus, roasted vegetables, onions, rice, flatbreads and Middle Eastern seasoning blends.
- Pairs well with Lamb, chicken, parsley, mint, yoghurt, sesame, onion, tomato and olive oil.
- How to use Sprinkle near the end of cooking or use as a finishing spice to preserve its fresh acidity.
- Compare with Cleaner and easier to control than salted sumac blends because seasoning can be adjusted separately.
- Possible substitute Lemon zest or a little lemon juice can add acidity, although they do not reproduce sumac's dry berry character.
- Storage Keep sealed away from heat, light and moisture to protect the crimson colour and tang.
Good to know: Sumac adds sourness without adding liquid, making it useful in dry rubs and finishing blends.
