Yellow Mustard Powder - Quick Reference

What is it?: Yellow mustard powder is made from finely ground pale mustard seed and provides an even, easy-to-mix mustard flavour.

Flavour: Dry, warm and mildly pungent, with sharper heat developing once it is mixed with liquid.

Common uses: Cheese sauces, macaroni cheese, dressings, rubs, devilled dishes, mashed potato, homemade mustard and savoury baking.

Pairs well with: Cheddar, vinegar, honey, garlic, paprika, turmeric, beef, pork, potatoes and cream sauces.

How to use: Mix with cold liquid for a stronger initial bite, then allow it to stand briefly before use. Heat softens its pungency.

Compare with: Smoother and milder than powders made from brown or black mustard seed.

Substitute: Prepared English mustard can replace it in wet recipes, but reduce other liquid and account for added salt or vinegar.

Storage: Keep tightly sealed away from heat and moisture, as the powder loses aroma faster than whole seed.
