Star Anise Whole - Quick Reference
- What is it? The dried star-shaped fruit of Illicium verum, used whole for slow infusion.
- Flavour Sweet, warming and intensely liquorice-like with a fragrant woody character.
- Common uses Pho, Chinese braises, mulled drinks, stocks, poached fruit, syrups and slow-cooked meat.
- Pairs well with Cinnamon, clove, ginger, orange, fennel, soy sauce, duck, pork and pear.
- How to use Add one or two stars during cooking and remove before serving.
- Compare with Slower and easier to control than ground star anise because the whole pod can be removed.
- Possible substitute Use a small pinch of ground star anise or anise seed, taking care not to overpower the dish.
- Storage Keep sealed in a cool, dry place away from direct sunlight.
Good to know: The decorative whole stars are useful in drinks and presentation, but broken points carry the same flavour.
