What is it?: Green Sichuan pepper husks valued for their fresh citrus aroma and numbing effect.
Flavour: Bright, green, sharply citrusy and intensely tingling.
Common uses: Fish, chicken, hot pots, chilli oils, salads and light broths.
Pairs well with: Lime, coriander, chilli, ginger and seafood.
Compare with: Fresher and more piercing than red Sichuan pepper, with less warm spice depth.
Substitute: Timut or Bhutan lemon pepper.
Storage: Keep sealed in a cool, dry place away from steam, moisture and direct light. Whole peppercorns retain their aroma longer than ground pepper; close the pack promptly after use.
Good to know: Green Sichuan pepper is especially volatile, so keeping it well sealed protects its vivid citrus aroma.
