Description

Think of Sinbad and Arabian Nights and you will not be far off the mark with this Salt

Thar Desert runs from the Arabian Sea along the Indo-Pakistan border to the Punjab region

When this region was underwater a billion years ago it filled caverns underneath the Thar Desert with brine, dry and hydrated for millions of years with water coming from the Pubjabi Mountains

The salty brine is forced up through the ground creating brine lakes, when the temperatures reach 50c they dry very quickly leaving behind the salt crystals

The local communities to these salt lakes are Nomadic in nature, the climate is such the area has been untouched by civilisation and for sure would have been the same salt Sinbad used on his adventures

The cream grey salt has a slightly tart salt flavour

Quick Reference

What is it?: A desert salt formed from ancient underground brine beneath the Thar region along the India-Pakistan border.

Flavour: Clean, dry and mineral with a strong salt character.

Common uses: Grind or crush for cooking, table use and robust savoury dishes.

Pairs well with: Meat, pulses, vegetables, flatbreads and regional spice dishes.

Compare with: An inland brine salt shaped by desert evaporation rather than a modern coastal sea salt.

Substitute: A dry coarse rock salt can replace it.

Storage: Keep sealed in a cool, dry place away from steam and moisture. For smoked or delicate finishing salts, close the pack promptly to protect their aroma and crystal texture.

Good to know: The brine reaches the surface in salt lakes and is dried by extreme desert heat, linking the salt directly to the Thar climate.
