- What is it? A ready-to-use Mexican paste made with hydrated Ancho chillies.
- Flavour: A pronounced sweet berry flavour with gentle dried-fruit depth and very mild heat.
- Heat level: Mild.
- Common uses: Stir into tomato sauces, cheese sauces, ketchups, stews, marinades, dips and Mexican-style sauces.
- Pairs well with: Beef, pork, beans, tomato, chocolate, cheese, avocado and warming spices.
- How to use: Spoon directly into the dish and stir well, adding more gradually until the berry flavour is as strong as required.
- Comparison: Sweeter and more berry-led than Guajillo, and less raisin-like than Pasilla.
