Ancho Chilli Paste 2kg - Quick Reference

  • What is it? A ready-to-use Mexican paste made with hydrated Ancho chillies.
  • Flavour: A pronounced sweet berry flavour with gentle dried-fruit depth and very mild heat.
  • Heat level: Mild.
  • Common uses: Stir into tomato sauces, cheese sauces, ketchups, stews, marinades, dips and Mexican-style sauces.
  • Pairs well with: Beef, pork, beans, tomato, chocolate, cheese, avocado and warming spices.
  • How to use: Spoon directly into the dish and stir well, adding more gradually until the berry flavour is as strong as required.
  • Comparison: Sweeter and more berry-led than Guajillo, and less raisin-like than Pasilla.
  • Storage: Follow the pack instructions and refrigerate after opening where required.
  • Good to know: Ancho is the dried form of the ripe poblano chilli, and this paste makes its distinctive sweet berry character available without soaking and blending whole pods.
