Ancho Grande Chilli Powder Quick Reference
- What is it? A finely ground powder made from dried ripe Ancho poblano chillies.
- Flavour A distinctive sweet berry flavour, supported by gentle dried-fruit notes and mild earthiness.
- Heat level Mild; chosen primarily for flavour rather than strong heat.
- Origin Mexico.
- Common uses Mole, Mexican sauces, chilli con carne, stews, marinades, rubs and slow-cooked dishes.
- Pairs well with Cumin, Mexican oregano, garlic, cocoa, tomato, beef, pork and beans.
- How to use Start with a small amount and build to taste. Approximately one level teaspoon replaces one whole Ancho pod; mix with warm water to make a paste.
- Compare with Sweeter and softer than Guajillo; less dark and intense than Mulato.
- Possible substitute Mulato for a darker berry character, or mild paprika where colour matters more than flavour.
- Storage Keep sealed in a cool, dry place away from direct sunlight to protect colour, aroma and flavour.
Good to know: Ancho is the dried form of the poblano chilli. Its defining character here is sweet berry flavour, not generic smokiness.

I use this constantly. I use alongside the chipolte chilli for a deeper and more complex flavour in my slow cooked beef shin tacos, home made enchilada sauce, use it on dry rubs for pork or chicken. It’s delicious. Brilliant service from Spices on the Web.
