This can be used with most meats and fish to add an instant hit of Great Flavour
1/4 Cup of Ancho Puree
1/4 cup of Honey
1Tablespoon Maple Syrup
1Teaspoon Sherry
2 cups of Veal Demi Glaze (French Type of Sauce)
3 Tablespoons of Unsalted Butter
Method
Place all ingredients in a pot, heat and simmer - reduce to 2cups worth, cool and keep in the fridge
