? Traditional Simnel Cake Recipe

A spiced fruit cake layered with marzipan—baked with love, shared with family.

Ingredients:

For the cake:

  • 225g butter (softened)

  • 225g light muscovado sugar

  • 4 large eggs

  • 225g self-raising flour

  • 225g mixed dried fruit

  • 100g glacé cherries (halved)

  • Zest of 1 lemon

  • 2 tsp mixed spice

  • ½ tsp Ground Cinnamon

  • ¼ tsp Ground Cloves

  • 1 tsp Ground Nutmeg

For the marzipan:

  • 500g golden marzipan

To finish:

  • 1–2 tbsp apricot jam (warmed)

  • 1 egg (beaten, for glazing)
     

    Method:

  • Preheat oven to 150°C (130°C fan) / 300°F / Gas mark 2. Grease and line a deep 20cm round cake tin.

  • Cream butter and sugar together until light and fluffy. Beat in the eggs one at a time.

  • Fold in flour, spices, fruit, cherries, and lemon zest.

  • Roll out a third of the marzipan into a circle the size of your tin.

  • Spoon half the cake mixture into the tin, level it, then place the marzipan circle on top. Spoon the rest of the mixture over and smooth the top.

  • Bake for 2–2¼ hours, or until golden and firm to the touch. A skewer should come out clean (avoid hitting the marzipan layer!).

  • Cool in the tin, then on a wire rack.

  • Once cooled, brush the top with warmed apricot jam, then roll out another circle of marzipan to cover the top.

  • Roll 11 small marzipan balls and arrange them around the edge to represent the apostles (minus Judas!).

  • Brush with beaten egg and grill gently until golden (watch it carefully!).
