There are times when I reflect on the Spice Industry, how our trade has fundamentality not changed since the first traders sourced spices from one area of the world and brought them to different markets.
Malabathrum leaves are a great example of this, grown in North India, traded in Greece and Rome in the first century. The process of finding where it was grown naturally, finding somebody to harvest and dry the crops, travelling then from inland to ports to be taken on ships to the markets.
Apart from the tools we use today to help, the process is in effect no different. We feel lucky enough to be part of a very long line of spice merchants who have been bringing aroma and flavour to meals for generations. When you enjoy a meal flavoured with good spices remember you are enjoying the same flavours Ancient Greeks, Egyptians and Romans were enjoying.
