Here’s a simple recipe for a Cinnamon-Spiced Pumpkin Soup

Ingredients:

1 can of pumpkin puree
1 onion (chopped)
2 garlic cloves (minced)
2 cups vegetable broth
1 tsp cinnamon
1/2 tsp nutmeg
Salt and pepper to taste
Optional: cream for extra creaminess

Instructions:

Sauté onion and garlic in a pot until soft.
Add pumpkin, broth, cinnamon, and nutmeg. Simmer for 15 minutes.
Blend until smooth, season to taste, and add cream if desired.
Good for 3 days in the fridge, can be frozen for when the days are really freezing
