Cascabel is known as the rattle chilli, the inside is hollow and when dried the cascabel becomes a rattle, traditionally given to babies to play with
The cascabel skin is very thin and very tough so requires a good long soak to soften up, I advise the chilli is broken up before soaking, chopped into small flakes helps
The dye from such a thin walled chilli is amazing, full deep colour
Warmer than some other mexican chilli at 5000 SHU
Cascabel is sweet nutty in flavour, quite delicate and can hide behind other flavours so its use is to be considered to get the wonderful flavour to come through

Very tasty
Very tasty and mild - so you can add more and get great flavour. I've moved from 'Hot' chillies, to mild ones and use more to get flavour without excessive heat.
