S4 Cayenne is the type known in many Indian Restaurants and Supermarkets - around madras heat of 20-30k SHU
S17 on the other hand is hotter at around vindaloo heat or 50-70k SHU

- What is it? A hotter Indian Cayenne powder made from the S17 type.
- Flavour The familiar clean Cayenne flavour with a stronger, sharper kick.
- Heat level Hot, around 50,00070,000 SHU, approximately Vindaloo-level heat.
- Origin India.
- Common uses Hot curries, sauces, marinades, chilli con carne, rubs and seasoning blends.
- Pairs well with Cumin, coriander, turmeric, garlic, ginger, tomato and black pepper.
- How to use Add in small amounts and taste before increasing.
- Compare with Considerably hotter than the standard S4 Cayenne used in most UK and European recipes.
- Possible substitute De Arbol for similar heat with a Mexican character, or S4 Cayenne for a milder result.
- Storage Keep sealed in a cool, dry place away from direct sunlight to protect colour, aroma and flavour.
Good to know: S17 retains classic Cayenne flavour but is selected specifically when the usual S4 heat is not enough.

I grow cayenne peppers every year and can’t get enough of it. I tried the S17 hot cayenne and I was surprised how hot and warm it was compared to fresh chillis. Even though these S17 cayenne peppers are dried and ground to a fine powder there is hardly any heat loss, I will be ordering this product again when I make Pakistani Bassar
