Aji Jobito is a traditional Capsicum baccatum variety from Peru, grown primarily for its aromatic flavour rather than heat. It is widely used in regional cooking, particularly in sauces and stews where fragrance and fruit character are more important than pungency.
Pods are small to medium-sized, lantern-shaped to rounded, and slightly ribbed. Fruits ripen from green to yellow or yellow-orange when fully mature. The walls are medium thickness, making the pods suitable for fresh use, blending, and cooking.
Flavour is distinctly aromatic with fruity and floral notes typical of Peruvian baccatum chillies. Heat is regarded as Mild, providing gentle warmth that complements dishes without dominating them. No formally published Scoville Heat Unit figure is available for this variety.
Plants are tall and branching, typical of Capsicum baccatum, and can reach 1–1.2 m under good conditions. They are productive once established and benefit from a long growing season and warm, sheltered conditions.
