Sugar Rush Amarillo is a flavour-led Capsicum baccatum variety developed as part of the Sugar Rush line. It is known for its high productivity and strong emphasis on sweetness and fruit character rather than aggressive heat. The name Amarillo refers to the yellow colour of the ripe pods.

Pods are elongated and often slightly twisted, typically growing longer than many standard baccatum varieties. They ripen from green to bright yellow and have relatively thick walls, making them suitable for fresh use, slicing, and cooking. Pod shape and length can vary depending on growing conditions.

Flavour is notably sweet and fruity with citrus undertones, characteristic of baccatum chillies. Heat is generally regarded as Medium, delivering a warming heat that builds gradually without overpowering the flavour. Reported heat levels commonly sit within the 20,000–50,000 SHU range.

Plants are tall and vigorous, often exceeding 1.2 m in height under good conditions. Sugar Rush Amarillo is a heavy-cropping variety that benefits from a long growing season and performs particularly well in greenhouses or sheltered outdoor positions.

This variety originates from the United Kingdom and is attributed to chilli breeder Chris Fowler, who developed the Sugar Rush line with a focus on flavour, yield, and adaptability to cooler climates.
