Tabasco is a well-known Capsicum frutescens variety traditionally grown for sauce production and fermentation. It is a distinct species from most common annuum chillies and is recognised for its upright fruits and sharp, direct heat. The name is associated with the Mexican region of Tabasco, where this type of chilli is believed to have originated.

Pods are small, narrow, and conical, typically 3–5 cm long. Fruits grow upright on the plant and ripen from green through yellow and orange to bright red when fully mature. The walls are thin, making the pods ideal for fermenting, drying, and liquid processing.

Flavour is sharp and acidic with a clean chilli bite rather than sweetness. Heat is classed as Hot, commonly placed in the 30,000–50,000 SHU range, delivering a quick, penetrating heat that disperses rapidly.

Plants are compact to medium in size, usually reaching 60–90 cm in height. They are highly productive once established and perform well in warm, stable conditions, particularly in greenhouses or sheltered outdoor positions.

Tabasco has significant cultural importance due to its long-standing use in chilli sauces and preserved products. Its fruit characteristics and flavour profile make it especially suited to fermentation and liquid chilli preparations rather than fresh eating.
