Fenugreek Seeds - Quick Reference
What is it?: Whole dried fenugreek seeds used in curries, pickles, spice blends and slow-cooked dishes.

How to use: Toast or fry gently and avoid scorching, as burnt fenugreek becomes intensely bitter. Seeds can also be soaked or crushed.
Compare with: Whole seeds release flavour more slowly and retain aroma longer than ground fenugreek.
Substitute: Ground fenugreek can replace them when texture is not needed, using less and adding it carefully.
Good to know: The seeds are very hard, so crushing or soaking them can make their flavour easier to extract in shorter recipes.
