Mexican in origin but Texan in attitude
You can adapt any breakfast food to this recipe, this basic version is the building blocks
Cook Time 20 mins: Serves 2-4 depending on whether you are a rancher or admin worker :)
Ingredients
- Olive Oil
- 1/2 Medium Onions Chopped
- 400g Vine Ripened Tomatoes
- Sweet Pepper Diced
- 1/2tsp Green Jalapeno Powder - you can add more chilli here at your choice
- 1/2 Tsp Chipotle Powder
- 1/4 Tsp Cumin
- 4 Corn Tortillas
- Butter
- 4 Fresh Eggs
- 2 Tsps. Fresh Coriander Chopped
Instructions
- Fry the onions in the oil until translucent then add the chopped tomatoes and cook through to create a sauce, half way through add the chilli and cumin if using and simmer for 10 mins, add salt to taste
- Heat up the Tortillas in the oven, grill or microwave - warm them through
- Fry each tortilla until little air pockets start to appear - min on either side in a little oil
- Fry the eggs up
- Serve with Tortilla, Eggs and some of the sauce, garnish with coriander
