Huevos Rancheros Recipe

Mexican in origin but Texan in attitude

You can adapt any breakfast food to this recipe, this basic version is the building blocks

Cook Time 20 mins: Serves 2-4 depending on whether you are a rancher or admin worker :)

Ingredients

  • Olive Oil
  • 1/2 Medium Onions Chopped
  • 400g Vine Ripened Tomatoes
  • Sweet Pepper Diced
  • 1/2tsp Green Jalapeno Powder - you can add more chilli here at your choice
  • 1/2 Tsp Chipotle Powder
  • 1/4 Tsp Cumin
  • 4 Corn Tortillas
  • Butter
  • 4 Fresh Eggs
  • 2 Tsps. Fresh Coriander Chopped

Instructions

  • Fry the onions in the oil until translucent then add the chopped tomatoes and cook through to create a sauce, half way through add the chilli and cumin if using and simmer for 10 mins, add salt to taste
  • Heat up the Tortillas in the oven, grill or microwave - warm them through
  • Fry each tortilla until little air pockets start to appear - min on either side in a little oil
  • Fry the eggs up
  • Serve with Tortilla, Eggs and some of the sauce, garnish with coriander
