Kentjur is a root spice, related to ginger
It is produced in Indonesia, used in their wonderful cuisine
The root is oven dried, so the root because very tough, it will need a good simmering in boiling sauce - water to soften and release its wonderful delicate ginger flavour
Kentjur root is not ideal for anything else, it will require a good simmer to soften
Root is dried and chopped into 1-2cm size round slices
Also used in Sichuan and Balinese cuisine, in Bali Kentjur is often incorporated into spice pastes along with turmeric, galangal, kemiri nuts, ginger, lemon grass, chillies and long pepper
Kentjur is a great spice ready to be rediscovered by modern cooks. Use it in the traditional style for Indonesian bumbus and curries, or substitute it for ginger in your favourite recipe
