Liquorice Sticks - Quick Reference
What is it?: Cut pieces of dried liquorice root rather than the sweetened black confectionery commonly sold as liquorice.
Flavour: Naturally sweet, woody and earthy with a lingering anise-like liquorice character.
Common uses: Herbal infusions, teas, syrups, poaching liquids, desserts and slow-simmered sauces.
Pairs well with: Mint, fennel, anise, ginger, citrus, blackcurrant, pear and warming spices.
How to use: Simmer the root for around 10-20 minutes to extract its flavour, then strain before drinking or using the liquid in a recipe.
Compare with: Gentler and woodier than pure liquorice juice sticks, which are concentrated and far more intense.
Substitute: Liquorice root powder works in recipes where the solid pieces would be inconvenient, though it is harder to strain clear.
Storage: Keep dry and airtight. The dense root keeps well but should be protected from moisture.
Good to know: The sweetness comes naturally from the root itself, so these sticks taste very different from sugar-heavy liquorice sweets.
