Quick and Easy Chicken Stir Fry with the lovely Mala Seasoning
For 2 People : Prep Time 10 Mins : Cooking Time 15mins
Ingredients
2 Chicken Breasts Diced
1-2 Teaspoons of Jenny Songs Mala Seasoning
2 Garlic Cloves
Teaspoon of Diced Ginger
Sesame Oil
Peanut Oil or Your Choice
Soya Sauce
Cashew Nuts - Optional
Stir Fry Vegetables Sliced and Diced as you like
1/2 Cup of Chicken Stock - use less or more depending on your preference of how much liquid you want in your dish
Instructions
Marinate the Chicken in a Bowl with a teaspoon to 2 teaspoons of Mala Seasoning (the more you add the more intense chilli and Sichuan flavour) Dash of Sesame Oil, Soya Sauce, Crushed Garlic and Ginger
Leave in the fridge for min 30mins
Heat up Wok or Frying Pan
Brown the Chicken stirring occasionally
Add the cashew nuts if using, pour in the Chicken Stock and bring to the boil
Simmer for 5 mins stirring a couple of times
Add the Stir Fry Vegetables and stir until they reduce and heat through, serve al dente
