Description

Mediterranean sea salt is obtained from the warming waters of southern Italy

Produced in a solar/wind plant in a natural reserve far away from civilisation, seawater is directed through manual channels set in 100s of years old salt marshes

The wind and sun dry the sea water leaving crystallised salt which is harvested using traditional tools and sieved into sizes

The farm has been handed down through generations with a heritage dating back 100s of years

These farmers work in harmony with the land with the reserve being a habitat for many endangered bird and plant species, a great example where we can work in harmony with nature

Quick Reference

What is it?: A straightforward coarse sea salt produced from Mediterranean seawater.

Flavour: Bright, clean and classically saline with a firm crunchy crystal.

Common uses: Use in grinders, pasta water, brines, roasting and salt crusts.

Pairs well with: Fish, vegetables, pasta, bread, meat and Mediterranean cooking.

Compare with: More general-purpose and robust than delicate flor de sal, which is reserved for finishing.

Substitute: Any good coarse sea salt can replace it measure for measure by weight.

Storage: Keep sealed in a cool, dry place away from steam and moisture. For smoked or delicate finishing salts, close the pack promptly to protect their aroma and crystal texture.

Good to know: This is the workhorse salt of the range: coarse enough for a mill and versatile enough for both cooking and the table.
