Mexican farmers for so many generations created a plate full of spices herbs and chilli that marry together so well
Big shocker though, Mexican Oregano is not Oregano, it is related a few evolved generations before, as with so many spices over the years a mixture of names and understandings have created names of spices that refer to their flavour and not plant genus types
Mexican Oregano is actually Lippia graveolens, a flowering plant similar to oregano, tomato tomarto, what is a name with food, when it smells and tastes sweet citrus herby flavour then to us its Mexican Oregano
Mexican Oregano is a wonderful flavour infused with other cuisines but when married up with our Mexican Chillies the flavours stand up to the wonderful strength of Ancho, Pasilla, Chipotle to name a few

Mexican Oregano - Quick Reference
What is it?: A dried Mexican herb from the verbena family, distinct from Mediterranean - Turkish oregano.
Flavour: Bold, citrusy and earthy with light liquorice and pepper notes.
Common uses: Mexican chilli, pozole, beans, salsas, taco fillings, adobo and slow-cooked meat.
Pairs well with: Cumin, chilli, garlic, lime, tomato, pork, beef and black beans.
How to use: Crush between the fingers before adding, then cook into sauces, stews or marinades.
Compare with: Stronger and more citrus-led than Greek or Turkish oregano.
Substitute: Mediterranean oregano can be used, but the result will be softer and less citrusy.
Storage: Keep sealed, dry and away from direct light to protect its volatile oils.
Good to know: Mexican oregano is not simply a regional version of common oregano; it comes from a different plant family and gives a noticeably different flavour.
