Puccia is a traditional Italian bun from the south, known for its light structure and crisp finish. These par-baked 115g buns are made in the Naples region and pre-sliced for convenience, ready to be finished in the oven in just a few minutes.
Baked at high temperature, the exterior becomes golden and lightly crisp, sometimes with characteristic spotting, while the interior remains soft and airy with very little crumb. The hollow centre opens easily, making it ideal for generous fillings without feeling heavy.
Perfect for smashed burgers, cured meats, deli-style sandwiches or as a warm dipper for soups, puccia works equally well with hot or cold fillings. Supplied ambient with the option to freeze, they offer flexibility and speed for busy kitchens.
Each base is packed in protective, recyclable packaging with an ambient shelf life of 1-2 months from date of purchase. Store in a cool, dry place — no chilled storage required.

Cooking instructions
Oven bake (recommended)
Preheat the oven to 200–220°C (fan 190–200°C). Place the panuozzo directly on the middle shelf and bake for 6–10 minutes until the crust is crisp and lightly golden. Allow to cool slightly before slicing and filling.
For a crisper finish
Once filled, return to the oven for 2–3 minutes to warm through and lightly toast the interior. This works particularly well with mozzarella, grilled vegetables or cured meats.
Professional tip
Because the bread is already part-baked, you are finishing rather than fully baking. Avoid over-baking, as the crust can firm up quickly. The ideal result is a crisp exterior with a soft, airy centre ready to absorb flavour from the filling.
