Brown Linseed - Quick Reference
What is it?: Brown linseed, also called flax seed, used whole or ground in breads, cereals and seed mixes.
Flavour: Mildly nutty and earthy, with a slightly deeper cereal flavour than golden linseed.
Common uses: Use in bread, crackers, porridge, granola, smoothies and mixed seed toppings.
Pairs well with: Pairs well with oats, wholemeal flour, nuts, honey, yoghurt and other seeds.
How to use: Use whole for crunch or grind shortly before use. When mixed with water, ground linseed forms a natural gel.
Compare with: Brown linseed is darker and slightly earthier than golden linseed, but the two can usually be used interchangeably.
Substitute: Golden linseed is the direct substitute; chia seed gives similar gel formation with a different bite.
Good to know: The whole seeds store better than ground linseed because their natural oils remain protected inside the seed coat.
