Cinnamon Ceylon 8cm Quills Organic - Quick Reference

What is it?: Certified organic Ceylon cinnamon 8cm quills, made from the thin layered bark of Cinnamomum verum grown in Sri Lanka.

Flavour: Delicate, sweet and fragrant, with soft citrus, floral and light woody notes.

Common uses: Tea, hot chocolate, desserts, custards, fruit, delicate baking and lightly spiced savoury dishes.

How to use: Simmer a quill gently in drinks, syrups or sauces, then remove before serving.

Compare with: Ceylon cinnamon is lighter, sweeter and more delicate than cassia or Vietnamese cinnamon.

Substitute: Cassia can substitute but gives a stronger, hotter and more robust cinnamon flavour.

Storage: Store in a cool, dry place away from direct sunlight and moisture. Keep sealed to protect the aroma and flavour.

Good to know: Ceylon quills are made from many thin bark layers rolled together, unlike the thicker single curls typical of cassia.

    I buy these quills every year, buy fresh for optimum flavour when Steve has them in. We use them in curries, biriyani, spicy rice, desserts and Kashmir tea. Full flavour, I stay away from cassia bark as it can be too overpowering.
