Fenugreek Leaves -Methi Leaves - Quick Reference
What is it?: Dried fenugreek leaves, known as methi, used to give curries and breads a distinctive savoury aroma.
Flavour: Herbal, slightly bitter and nutty, with sweet hay and maple-like notes.
Common uses: Use in curries, dals, vegetable dishes, naan, paratha, sauces and butter-based dishes.
Pairs well with: Pairs well with tomato, potato, spinach, lentils, cream, cumin, coriander and chilli.
How to use: Crush the leaves between the fingers before adding, usually towards the end of cooking, to release their aroma.
Compare with: Methi leaves are greener and more aromatic than fenugreek seed or powder, which are harder, nuttier and more bitter.
Substitute: A small amount of fenugreek powder can provide related notes but cannot reproduce the leafy aroma.
Good to know: Kasuri methi-style dried leaves are often used as a finishing spice rather than cooked for the full length of the recipe.
