Garam Masala - Salt Free - Quick Reference

What is it?: A salt-free aromatic spice blend designed to add warmth and fragrance to Indian-style dishes.

Flavour: Warm, rounded and aromatic rather than chilli-hot, with sweet spice, earthy and peppery notes.

Common uses: Use in curries, dals, rice, vegetables, meat dishes, soups and marinades.

Pairs well with: Pairs well with cumin, coriander, turmeric, chilli, tomato, onion, garlic and yoghurt.

How to use: Add during the later stages of cooking or as a finishing spice to preserve the more delicate aromatic notes.

Compare with: Garam masala is an aromatic finishing blend, unlike curry powder, which often includes turmeric and is commonly cooked earlier.

Substitute: Where unavailable, combine cumin, coriander, cinnamon, cardamom, cloves and black pepper.

Good to know: There is no single fixed garam masala recipe; regional and household versions vary considerably in both ingredients and balance.
