Hibiscus Flowers - Edible - Quick Reference
What is it?: Dried edible hibiscus calyces used for vivid red infusions, syrups, desserts and savoury sauces.
Flavour: Tart, fruity and refreshing, with cranberry-like and red berry notes.
Common uses: Use in teas, agua fresca, syrups, jams, cocktails, alcohol-free drinks, desserts and tangy sauces.
Pairs well with: Pairs well with ginger, cinnamon, citrus, berries, mint, chilli and sugar.
How to use: Infuse in hot or cold water and strain, adjusting sweetness to balance the natural acidity.
Compare with: Hibiscus is sharper and more acidic than elderflower, chamomile or rose, and contributes strong colour as well as flavour.
Substitute: Unsweetened cranberry can replace some tartness, though it will not provide the same floral quality.
Good to know: The intense ruby colour is naturally released during infusion and can stain porous surfaces and pale fabrics.
