From our Flor de Sal from salt pans in the Algarve, Portugal has another very special salt
From the salt pans of Marinhas do Sol, close to Aveiro, there is a spring water salt that is harvested by a small group of farmers.
Underground rivers mix with a rock salt that was formed over 200 million years ago and produce the brine which is found at the spring in northern Portugal.
The brine is diverted into pans and then harvested by hand by the salt sweepers, who use traditional wooden tools to scrape the salt from the surface of the pans, as the water evapourates.
The salt is then dried in pyramids on wooden platforms in the sun.
The salt is then tested by government dept and certified and allowed to be sold on the open market!
I get asked having stocks of so many salts and peppers which one is the best, very difficult to answer because they all have unique flavours absorbing the local climate they were created in, all I can offer is the favourite ones I like ti use at home, spring water salt is now in that place

Spring Water Salt
Lovely every day salt and a good price.

A delicious salt!
Decided to give this one a try and glad that I did. It has a lovely small-grain texture, and (for me, anyway), the flavour has a pleasantly umami note, with saltiness that leaves behind a clean, vaguely tannic feel on the tongue. Looking forward to trying this out on various dishes.
